Once. Again.

I am sick. Trying hard not to hate everyone that is healthy.

I wanted to go visit two separate friends that have had babies this last month yesterday afternoon, but instead spent the day on the couch with my box-o-tissues, watching re-runs of Still Standing and Reba.

DH came home and cleaned up (beautiful, beautiful man) and then made everyone "potato pizzas" (really cool WW recipe that most of our kids loved. #2 won't try anything, so she still doesn't know if she likes it).

I wish I could clean the house right now. It's chore day. There's so much to do. My head hurts.

So much to blog about. No brain power to type it out eloquently...

Potato Pizza Recipe:

Pepperoni Pizza Potato Skins
POINTS: 4
INSTRUCTIONS

1 sprays cooking spray
2 large potato(es), baked, cooled completely, quartered lengthwise*
1/3 cup pizza sauce
2 oz pepperoni, finely chopped
1/3 cup Kraft Low-Moisture, Part-Skim Finely Shredded Mozzarella Cheese, or other brand
1/8 tsp dried oregano, red pepper flakes or garlic, or to taste



Preheat oven to 425ºF. Coat a baking sheet with cooking spray.


Slice top half or two thirds of potato flesh off each potato wedge. (Reserve potato flesh for soup or mashed potatoes, if desired). Spoon about 2 teaspoons of pizza sauce over each potato wedge; sprinkle wedges with pepperoni and then with cheese.


Carefully place potato skins on prepared baking sheet. Bake until cheese melts and potatoes are hot, about 6 to 8 minutes. Season to taste with oregano, red pepper flakes or garlic. Yields 2 potato skins per serving.
